Today was an awesome day. I needed a day where I only left the house to run & grocery shop (in the morning) and walk the dog (in the late afternoon). I got a lot accomplished today, too!
I got all of the dinners for the week assembled and ready to just put in the oven or make. I made soft pretzels (will post a recipe for those). I cleaned upstairs. I am doing laundry. The house is in order. I am feeling good! The highlight of the day was how quickly I was able to assemble 3/4 of the meals I have planned. I just feel so organized and on top of everything and its still early in the day. Now only if my laundry was folded and put away, I’d be gold!
So here’s what Sunday looked like, in pictures…

I made my Chicken Pot Pie as a dinner option #1 for this week. I tweeked it a little and it came out much better. Not too wet, not too dry. I think it will steam itself well in the oven, too. I guess we’ll find out this week!

This is just some of our bounty. I have to use the tomatoes this week, or they will go bad. Any ideas? Also we got two zukes that size. The one went into a zucchini bake (more on that later) as dinner option #2, 1/4 of that was cut in half and stuffed with sausage for Jared dinner option #3. I also chopped some potatoes and have them ready to go for roasted potatoes and kebabs which is dinner option #4. Also, I just remembered I stupped hot pepper with cream cheese and bacon (again, another Jared dinner). In all, I think we are ready to go for meals, and all I will need to do is pop them in the oven. This helps prevent us ordering take-out, which I do not want to do at all this week. If only I were this good all the time. I’m pretty excited about the meals.
What do you eat, though? Well, I will eat a majority of the meals, with the exception of the sausage stuffed zucchini and bacon wrapped peppers. Those nights, I will be certain to keep the theme going, but I bet I opt for zuccini pasta. We have a lot of zucchini here! No complaints though!

Every Thursday in the summer at Market Square, Downtown Pittsburgh, is a Farmer’s Market. The pickings vary as the season goes on, but I love going every Thursday.

I love the flower stand they have! This is the whole reason I go every Thursday (aside from the fresh veggies, of coarse).

I didn’t buy any (insert sad face), but I did get some fresh basil & dates

I’m going to use a the basil for part of a wilted green flatbread pizza, which I will make tonight (Jared will probably get the frozen meat pizza in the freezer lol, he won’t eat my food). The dates will be saved for an “expirement” over the weekend. Working full time really prohibits me from (want to) expirment after work.
Lunch was an awesome Italian Tuna Salad. I ate salad without the dressing, but I did dip the bread into the dressing. The dressing was divine, but the salad was FINE without the dressing. I ate about 4/5 of the salad and I was full.
