Last night, I was fortunate enough to have some time to make dinner for Jared and I. Two nights in a row! I made him a pot of simple chili… Tomatoes, beans, peppers (from my “cute pepper” bag), onion, etc.
I made myself a second pot of “mainly veggie” chili with the same ingredients and sub-ed turkey for beef. I picked up this almost organic ground turkey at McGinnis. I also wanted a bit more kick to my chili, so I added half can of enchilada sauce. I had on hand.
Put it in my new “soup mug” and Jared and I had a conversation about why the mugs have two handles. I know, I know. It was more of a “southwest chili” instead of a chili-chili. I used my favorite Back to Nature crackers as a scoop for the chili =)

Did I give an update on the car rental? I cannot remember! Jared and I were going to rent a car one-way to/from NYC from Enterprise. So of course, a month ago, I reserved it to ensure we’d have a car & reservation when we left. So of course, when I call yesterday to confirm they have it in the system, they told me it was an additional $1/mile to rent one-way. So the $90 car rental (that was the price I locked in a month ago) turns into $495. So I am scrambling to find a car to rent at a decent price. I will not stress over my vacation. I may not have a chance to get away again for months!

Speaking of NYC… I have a bunch of awesome ladies that have graciously accepted to write guest blog posts while I am out! I cannot wait to see what I get back (and you all get to read!). They will probably do a better job than I do!
